Zoe’s Lunch Box Banana Bread
This week’s recipe comes from 10 year old Squiz Kid Zoe Griffiths from Melbourne. She sent in her lunchbox banana bread recipe for us to test and it’s a winner!
Ingredients:
3 bananas (best ones are the brown mushy ones!)
2 tablespoons of golden syrup
1/4 cup of caster sugar
1 egg
1 cup of self raising flour
Pinch of salt
One tablespoon of cinnamon sugar (or even more!)
Method
1. Preheat oven to 180 degrees Celsius. Line a loaf tin with baking paper
2. Mash bananas in a medium bowl, then add golden syrup (perfect time to lick the spoon!!)
3. Stir in sugar
4. Sift the flour into another bowl
5. Add egg, flour, and salt and mix well (it’s ok if it is a little lumpy from the bananas)
6. Pour into tin and sprinkle lightly with cinnamon sugar
7. Bake for 30 minutes or until a skewer stuck into the middle of the cake comes out with no crumbs
8. Let it cool or eat cut and eat straight away if you’re impatient like me!
