Eva’s No-Bake Nutella Bites

Over the school holidays I made a lot of treats, including this no-bake Nutella bar recipe that was sent in by Eva. My brother and I loveeeeeeee Nutella so these were just the thing to help with the back to school blues. The hardest part is being patient enough to let them set in the fridge overnight!

Ingredients:

  • 120 g butter
  • 2 cups caster sugar
  • 2 tbs cocoa (sifted)
  • 1/2 cup milk
  • 1/2 cup Nutella
  • 1 tbs vanilla extract
  • 2 1/2 cups rolled oats
  • 2 1/2 cups Rice Bubbles
  • sprinkles

Method:

1. Line a slice pan with baking paper and set aside.
2. In a large saucepan melt the butter then add sugar, cocoa and milk. Whisk together and bring to the boil. Boil for one minute. Remove from heat.
3. Add the Nutella, vanilla, rolled oats and rice bubbles to the pan and combine well.
4. Pour into slice pan and smooth flat with the back of a metal spoon. Scatter over your choice of sprinkles. (Eva used coated chocolate chips but I used regular sprinkles that we had at home)
5. Refrigerate until set. This will take about 3 hours. Cut into squares with a sharp knife.

Rosie’s Tip of the Day – If you line your slice pan with baking paper, like Eva suggests, it will make it much easier to lift the whole slice out at once when it’s set. Then you can pop it on a chopping board and cut it into small bars (or slabs, chunks, pieces… whatever size your parents will let you have 😉)
